DISH BITZ


This week’s dish is Jollof Rice


Jollof rice, also called 'Benachin' meaning “one pot” in the Wolof language, is a popular dish all over West Africa. It is thought to have originated in The Gambia but has since spread to the whole of West Africa, especially Nigeria and Ghana amongst members of the Wolof ethnic group.[1][2]


There are many variations of Jollof rice. The most common basic ingredients are rice, tomatoes and tomato paste, onion, salt, and red pepper. Beyond that, nearly any kind of meat, vegetable, or spice can be added.

RECIPE

4 to 6 servings

Ingredients

Oil -- 1/4 cup

Chicken, cut into pieces -- 1 1/2 pounds

Water or stock -- 5 cups

Onions, chopped -- 2

Red or green bell pepper, chopped -- 1





Garlic, minced -- 3-4 cloves

Long-grain rice -- 3 cups

Tomato paste -- 1/4 cups

Tomatoes, chopped -- 2 cups

Carrots, peeled and chopped -- 2

Green beans -- 1 cup

Cabbage, chopped -- 1 cup

Salt and pepper to taste

Method

Heat the oil over medium-high flame in a large pot. Working in batches, add the chicken and brown on all sides. Remove the chicken to another large pot and add the water or stock. Bring to a boil, reduce heat to low and simmer for 20 minutes.

While the chicken simmers, pour all but 2-3 tablespoons of oil out of the first pot. Heat the oil over medium flame, add the onions and peppers and sauté until the onions are wilted and translucent, 4-5 minutes. Add the garlic and sauté for another 1-2 minutes.


Stir the rice into the onions and peppers and heat through for another 1-2 minutes. Stir in the tomato paste to coat the rice and give it a reddish hue. Add the chopped tomatoes and let them cook down for 2-3 minutes.

Pour in the chicken and its simmering liquid into the rice pot and add the carrots, green beans and cabbage. Season well with salt and pepper. Bring to a boil, reduce heat to low, cover tightly and simmer for 20 minutes.

Remove from heat, let rest another 10 minutes. Remove to a serving platter and serve with dodo, sliced hard-boiled eggs and a side salad.

Variations

There are many variations of jollof rice. Feel free to improvise using what you meats and vegetables you have on hand. Try beef, ham, shrimp, fish, goat or pork. For vegetables, add peas, potatoes, eggplant or mushrooms


Beef Jollof Rice: substitute cubed stewing beef for the chicken. After browning the beef, simmer in liquid for 45 minutes before adding to the sautéed rice mixture.






Vegetarian Jollof Rice: simply eliminate the meat and stir hot water or vegetable stock into the sautéed rice mixture.

Optional spices that can be used to flavor the dish are cinnamon, curry powder or cayenne. Some minced chile peppers can be sautéed with the onions to add extra bite.

President Barack Obama was the guest speaker at the Congressional Black Caucus’ awards dinner Saturday in Washington DC.

Obama and first lady Michelle Obama were greeted warmly at the CBC Foundation annual awards dinner . In a fiery 25 minute speech the president vowed to continue fighting to help the poor and middle class.

"The future rewards those who press on and I'm going to press on," Obama told the cheering crowd. "I don't have time to feel sorry for myself; I'm going to press on."

Obama told the predominately African American crowd blacks to quit crying and complaining and "put on your marching shoes" to follow him into battle for jobs and opportunity.

President Obama also challenged Republicans in Congress to show they care about job creation and was roundly cheered for showing he’s “going to fight” to fire up his supporters in a battle to “save the country.”

These Republicans in Congress like to talk about job creators. How about doing something real for job creators?" he said, prompting cheers and applause. "You say you’re the party of tax cuts. Pass this jobs bill, and every worker in America, including nearly 20 million African-American workers, will get a tax cut. Pass this jobs bill, and prove you’ll fight just as hard for a tax cut for ordinary folks as you do for all your contributors."

The audience erupted with laughter when he joked that Republicans have not always been against the kind of infrastructure spending he has proposed. "You all used to like to build roads, right? What happened?" the president asked, tongue firmly in cheek.

After the speech, several CBC members said they were pleased with the message. Rep. Donna Edwards , D-Md., said it was a "call to action." She said lawmakers on both sides of the aisle know where the battle lines are drawn on the issues and complaining about that will not accomplish anything - they must fight for what they want.

"He showed he's going to fight," she said.



Rep. Sheila Jackson Lee, D-Texas, said the president "took his gloves off" and that it was the right approach.

ST Louis native and California Representative ad CBC member Maxine Waters was reported as saying she was a “bit curious he didn’t mention Hispacnics, jews or gays” in his speech.

Hmm, it seems as though some of the things Obama said during speech was “bootstrappy” as far as African American involvement but then demands the Republicans to pass his jobs bill in order for African Americans to have jobs was definitely needed to be said. It seems to us is, all it takes is both the Dems and GOP to pass the bill and jobs will be created. Obama is a chess player and the strategy move with him playing right in the middle.

According to The National Enquirer: new Chicago resident talk show host Rosie O’Donnell is furious over the October cover of “O” magazine she shares with Oprah Winfrey – she feels she was used as a prop to make her new TV boss look skinny.

The Emmy winner “believes Oprah resorted to trick photography” to alter the picture so she looks thin, but didn’t use the same manipulation for Rosie, an insider told The Enquirer…

“Rosie is upset because she worked hard to make herself look good and get back into shape for ‘The Rosie Show,’” said the insider. “And this cover just makes her look terrible – especially standing next to Oprah, who is clearly slimmed down through the miracle of computer technology.

“In reality, Oprah has at least 30 pounds on Rosie!”

During his media blitz to promote his hit film, “Moneyball” Pitt made some off handed comment about his his ex-wife Jennifer Aniston last week in Parade Magazine on The Today show with Matt Lauer.







The comment was based on Pitt insinuating that his marriage to Aniston was boring.







On the Today show , Pitt said "My point was, the best thing I’ve done as a father is to ensure that my kids have a good mother. That’s all I was or am trying to say," Pitt said to Lauer. "It has no reference to the past and I think it’s a shame that I cant say something nice about Angie without Jen being drug in -- she doesn’t deserve it."





Meanwhile, Pitt made even more newz in regards to who he didn’t select to sit down with to promote his film, “Moneyball”—mainly Chelsea Handler (PICTURED).





Reportedly, Pitt refused to go on her show but the reason is fuzzy. Some insiders say its because she had Aniston are good friends and apparently feared the comedian would rip him in regards to his comments about Aniston. But others speculate that what Handler said about his second wife, Angelina Jolie, in December 2010, could be a factor when she said, “She can rescue as many babies from as many countries as she wants to,” Handler said about Jolie during a standup performance in December of last year. “I don’t f–king believe you. … She gives interviews, ‘I don’t have a lot of female friends.’ Cause you’re a f–king c–t. … You’re a f–king b–ch.”






Well whatever Pitt’s reasons, we are sure it was a public relations decision for him not to be on there, but the way its looking, it would have made newz either way if he did or didn’t!

In related newz, Pitt’s film, hyped “Moneyball” had a strong opening weekend, last weekend raking in over $19.5 million coming in second to Walt Disney's "The Lion King" reissue that was No. 1 for the second-straight weekend with $22.1 million, according to studio estimates Sunday. The film is exceeding expectations of critics and audience members alike and is likely to cop Oscar nominations including one for Pitt for Best Actor.






Chicago bred rapper turned fashion designer Kanye West is currently in Paris, France attending the city’s fashion week where he is set to debut his new women’s line. But from reports, the seams may not be completed by the time of its debut this Saturday.





From the rumor mill, it seems as though Ye is a terror on his couturists, interns and students from Central St. Martins have been constructing the line under West's iron command and is not part of the overall process of the line. Insiders insists that Louise Wilson, West's mentor and head of the Master's Fashion program at Central Saint Martins, is heavily involved in the direction of the line which from reports will be costly and non-functional meaning not producable or wearable for the masses






Sources also say that though Kanye was present for all the fittings, "he was so was prone to changing his mind a lot that it made the whole process slightly excruciating." The source also said "they'd be amazed if the collection is ready in time for Paris Fashion Week, and that's quite likely the reason it wasn't shown last week at New York Fashion Week after all.”


Well, if the rumor is true, are we surprised? Ye is a troubled genius and we are sure he wants only but perfection with anything he creates (and voicing it to people at loud tone. lol). As far as his line, it could be more just a novelty than anything for he even says the fashion world doesn’t take him seriously even with his studying fashion at Martins.

Grammy Award winning and Chicago native R Kelly was hired by Sony Pictures to score the soundtrack to the “Sparkle” remake that will star Whitney Houston, Jordan Sparks and Cee-Lo Green. The film is set to film next month.

















This week Chicago native singer/actress Jennifer Hudson hosted the grand opening of the Jennifer Hudson Weight Watchers Center in her hometown of Chicago. The center is a testament to Jennifer's lifestyle transformation.She said during the ceremony, “I never thought I would make it to have my own center. I’m so honored to be here and see this day.”

Jennifer celebrated by cutting the ribbon with Alderman Will Burns and Chicago Mayor Rahm Emanuel. Afterwards, she posed with the mayor and Cheryl Callan.

The center will donate a portion of its revenue to the Julian D. King Gift Foundation, an organization Jennifer set up to honor her deceased nephew.

Hmm, isn’t is a bit quick for her to open up a clinic? We are just saying. With the emphasis on her weight these days, maybe she should have waited a bit to see how her weight will be in say two years. Because with her as a spokesperson for Weight Watchers you know folk will be doing just that!

The 1985 Chicago Bears have been finally invited to White House. President Obama, a Bears fan, has invited the 1985 squad to finally receive the trip they rightfully earned so many years ago. The team, which has been voted the greatest defensive team in NFL hostry, was invited to the White House in 1986 by then president, Ronald Reagan, after their win against the New England Patriots in Super Bowl XX but the visit got cancelled when the Space Shuttle Challenger exploded and met a tragic end, which led to the indefinite postponement of the annual White House tradition. Zoom 25 years later and their invitation has been granted. They are scheduled to attend the White House Oct 7.

An NFL Hall of Famer whose dominant play for the Bears earned him the nickname "Danimal", was interviewed on 670 The Score's Mully and Hanley show in Chicago and addressed his strong feelings on the invitation. In a nutshell, his reasons were he has no family to take with him and because he's "not a fan of the guy in the White House."

In more related Chicago Bears newz, former running back Walter Payton — the late Hall of Famer who was an integral member of the 1985 Super Bowl championship team — is the subject of a new book that portrays the superstar player less than his moniker, “Sweetness.”


The biography by author Jeff Pearlman, “Sweetness: The Enigmatic Life of Walter Payton,” claims the NFL legend, who battled liver disease, and died in 1999 at age 45 from bile duct cancer, was a drug abuser and a philanderer who was at times suicidal, according to portions of the book posted on Sports Illustrated’s website, SI.com.

As quoted from Bud Holmes, Payton’s agent: “I’d see him walk out of the locker room with jars of painkillers, and he’d eat them like they were a snack.”

SI.com’s excerpts of the book detail examples of Payton’s struggle with drugs, claiming he kept tanks of nitrous oxide (laughing gas) and shared it with his Bears teammates. The excerpts also include claims from Holmes and others that Payton threatened to commit suicide.

Pearlman’s book also details claims about Payton's infidelity. It says Payton's longtime mistress attended his 1993 Hall of Fame induction ceremony and stayed at the same hotel that his wife and children were in.

His biography of Payton comes out Oct. 4, according to USA Today.

However, from some critics criticized that the episode “didn't work real hard to make it clear that Hoffman Estates is dozens of miles from downtown” and that “only the first half of the two-hour show even featured the suburban tryouts for the singing contest; the show's second half returned to Seattle, site of auditions already featured on "X Factor." THE BIG STL NEWZ STORY THIS WEEK IS



The St. Louis Cardinals won the Wild Card Race Wednesday nite, in one of the greatest comeback stories in sports of all time , winning 8-0 against the Astros. Meanwhile the Wild Card tied team the Atlanta Braves lost to the Philadelphia Phillies 4-3- in the 13th inning.

The Braves and Cardinals entered Wednesday's regular-season finales with 89-72 records. St. Louis trailed Atlanta by 10½ games on Aug. 25, then won 23 of the last 31 games.

The scenarios were If both the Braves and Cardinals won or lost on Wednesday, they would have met in a one-game tie-breaker on Thursday night in St. Louis to determine the wild-card playoff qualifier and if either the Braves or Cards lost or won to their opponent, there would be a tie breaking game at the winning opponent’ city grounds on Saturday . With the Cards and Philllies winning (Cards winning and Braves losing) , the Cards has advanced to the Playoffs and will play the Phillies (which includes first baseman St Louis native Ryan Howard) in the latter’s hometown on Saturday to see who will win the NL title.

The City Museum’s architect and founder Bob Cassilly died Monday while working at another project called Cementland, a repurposing project of his since 2000 of a former cement factory on a 54-acre site in north St. Louis. Cassilly reportedly died at Cementland after the bulldozer he was driving flipped down a hill. Early autopsy results show he died of multiple injuries, including a serious head wound. As a result of the tragic event, the museum was closed Monday and Tuesday in honor of Cassily and reopened on Wednesday for the first time since the death of founder Bob Cassilly. Former St Louis Rams player Mike Jones, who was part of the Greatest Team On Turf team, returned to St Louis Saturday as coach of the Lincoln University Blue Tigers who played the Edward Jones Dome in the St. Louis Gateway Classic. Jones is the first-year head coach at Lincoln U who made its debut in the Classic when they face Missouri Southern.



















As far as the game, Lincoln U lost 56-14 to Missouri Southern in the first of two games at the Gateway Classic in a doubleheader, a first for the Foundation. The second game was the University of Arkansas-Pine Bluff taking on Clark University and lost to Clark 9-7. It was reported that 10,000 fans attended, boosting attendance up tenfold in years.

Newbie St Louis based brewing company Six Row Brewing Co.will release its newest beer Plant No. 1 Pre-Prohibition Pilsner Sept 30. The lager was created as a co-marketing tool to promote its beer alongside the airing of filmmaker Ken Burns' new three-part documentary series, "Prohibition." on PBS Oct. 2-4. The film features St. Louis during this time in U.S. history . According to reports, Brown’s 90 plus minute set (PICTURE by Todd Owyoung of Riverfront Times) had three stage levels with a band and dancers performing songs from his first major hit, “run It” to his latest “The Beautiful People” with his trademarked mesmerizing acrobatic dance moves, costumes changes and shirtless grinding much to the screaming delight of females in the audience. Midliner T-Pain was reportedly just OK performing his solo and featured hits. Second opener Kelly Rowland’s set was punchy (but one Facebook writer said her set lacked energy) planted with man candy dancers performing snippets of sings during her Destiny’s child heyday as well as her monster smashes , “Dilemma” and , “Motivation” (sans Nelly and Lil Wayne). Pastor Shirley Caesar was an added judge in this year's How Sweet The Sound Gospel Choir Competition that took place Monday at ScottTrade Center. She, along with mainstay judges Marvin Sapp and CeCe Winans judged the various choirs who were in the competition. The top winners were Metropolitan Community Church of Greater St. Louis Choir and the Voices of Life from the Life Center International Church of God in Christ in St. Louis. Metropolitan Community Church Choir won the Large Choir competition and $10Kand the Overall Choir title. Voices of Life won the Small Choir competition for the second consecutive year and won $15,000K in prize money. Metro will also represent St. Louis at the How Sweet the Sound national competition in Los Angeles on October 28.

Bob Cassilly was an American sculptor and entrepreneur. Based in St. Louis, , he was best known as the founder of City Museum. Cassilly graduated from Vianney High School and earned a master's degree in art from Fontbonne University in St. Louis. His works include hippos for a playground in Riverside Park in Manhattan and two turtles for Turtle Park in St. Louis. He was 61. According to a report in the Riverfront Times, Funeral arrangements are still being made, but the event will likely take place this Saturday. At least part of Saturday's ceremonies will occur at a yet-to-be-determined Catholic church at the request of Cassilly's mother. Even though she wasn’t from St. Louis, the late singer/actress Vesta Williams performed here several times including at the old Mississippi Nights concert venue that was located in Laclede Landing. YOURS TRULY attended it (circa summer 1989). It was during the days that she was very voluptuous in her size. I can recall her hilariously funny interludes in between songs and promoting her album at the time “Vesta 4u” especially talking about singers who sang “under the key” and began imitating singers such as Pebbles and Al B Sure. She also talked about her love of men and aske dteh women in the crowd, “How many of you ladies think of sugar every time your man walks?” She was feisty and shook her big hair and corset laced outfit before an energetic crowd.And of course her big voice was more than worth the money. Williams died over the weekend at the age of 53 over an alleged drug overdose. Although she wasn't a household name (unfortunately), she and her talents will be greatly missed by those who were big fans of hers--including myself.

Mario The Great . Coming off of attending the FAME tour after party with host R&B singer Kelly Rowland (and tweeting with Rowland during the event), thsi charismatic socialite is adding co-host to his fashionable cap as he joins Mocha Latte on the mic at her Best Damned Ladies Night Period at Club Amnesia this Saturday.







Mo Spoon. This vet promoter of MPAC has three events going on this week. This past Monday, he and promoters Hella Fly Promotions kicked off week three of their MONDAY NIGHT FOOTBALL networking event AT THE ALL NEW BSV LOUNGE (FORMALLY AREA CODE).
